2Wash and dry all produce. Preheat oven to 400°F. Core, seed, and thinly slice red bell pepper. Trim and thinly slice scallions, keeping greens and whites separate. Cut limes into wedges. Thinly slice radishes. -
3Halve and pit avocado, scoop flesh into a small bowl . Add 2 tbsp scallion greens and a squeeze of lime juice. Mash with a fork until smooth. Season with salt and pepper. -
4Heat a drizzle of olive oil in a large pan over medium-high heat. Add bell pepper and cook, tossing, until softened and slightly charred ⏱️ 5 minutes . Add scallion whites and cook ⏱️ 1 minute . Season with salt and pepper.

5Wrap flour tortillas in aluminum foil and place in oven to warm. Alternatively, heat each tortilla over a medium-low flame for ⏱️ 15 seconds per side until lightly charred. Set aside under a towel or foil. -
6Add ground beef and cumin to the pan with veggies. Cook, breaking up meat, until browned and cooked through ⏱️ 4 minutes . Season with salt and pepper. Finish with a few squeezes of lime juice.

7Spread each tortilla with guacamole, top with beef mixture and radish slices. Serve with lime wedges and sour cream for dolloping on top. Enjoy!
